Ginger bread pancakes

Ingredients:

  • 2 cups flour
  • 1 teaspoon salt
  • 1 1/4 teaspoons baking soda
  • 3/4 teaspoon baking powder
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp nutmeg 
  • 1 tsp ginger
  • 2 Tbs brown sugar
  • 2 eggs seperated
  • 2 cups buttermilk
  • 1 tsp vanilla
  • 2 Tbs strong brewed coffee

Instructions:

  • Sift together dry ingredients.
  • Add egg yolk, buttermilk, vanilla and coffee.
  • Mix until blended, but do not overbeat.
  • Beat egg whites until stiff peaks form, fold together egg whites with the batter.
  • Pour 1/4 cup per pancake on lightly oiled skillet.  
  • Cook first side until bubbles start to form and pop.  Flip and cook other side until lightly browned.
