Sunday Brunch Casserole

Ingredients:
  • 1/2 pound of sliced bacon
  • 1/2 cup chopped onion
  • 1/2 cup chopped red pepper
  • 12 eggs
  • 1 cup milk
  • 1 package frozen hash browns, thawed
  • 1 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp dill weed
Instructions:
  • In a skillet cook bacon until crisped, remove with slotted spoon, crumble and set aside.
  • Saute onion and pepper in the bacon drippings until tender.  Remove from pan.
  • beat eggs and milk in a large bowl.  Mix all ingredients into beaten eggs.  pour into greased 13"x9" baking dish
  • Bake uncovered in 350 degree oven for 35 - 45 minutes, or until knife inserted comes out clean
  • servers 6 - 8
