Cream of Broccoli Soup

  • 1/4 stick butter
  • 1 onion chooped
  • 3 tbs flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 - 14 oz can chicken broth
  • 2 cups evaporated milk
  • 1 package chopped frozen broccoli (or use fresh)
  • pinch of nutmeg
  • Saute onions in butter.  Blend in flour, salt, and pepper.  Stir over medium heat for 2 minutes
  • Gradually add broth and broccoli.  Bring to a boil
  • Cover and simmer until cooked
  • Add evaporated milk while stirring.  Do not boil
  • Add a pinch of nutmeg
