Parmesan Crusted Chicken

  • 4 bonless chicken breasts pounded thin
  • seasoned flour to dust chicken
  • 3 eggs
  • juice of 3 lemons
  • 3 cups seasoned panko bread crumbs
  • 1/2 cup parmesan cheese
  • salt and pepper
  • 3 tbs chopped parsley
  • 1/4 cup olive oil
  • Whisk together the eggs and lemon juice
  • Combine panko, 1/4 cup parmesan cheese, salt, pepper and parsley
  • Dredge the chicken in seasoned flour and place in egg mixture, refrigerate for 1 hour.
  • Remove chicken from egg mixture and coat with bread crumb mixture. pan sear chicken in olive oil for 2 minutes per side.
  • Place chicken in shallow baking dish and top with remaining parmesan cheese. Bake at 350 for 10 minutes
  • Serve with sage lemon butter sauce
