Tortellini Ala Brenda

  • 1/2 lb ground sausage
  • 1 small onion thinly sliced
  • 1/2 lb fresh (or frozen) asparagus cut into bite sized pieces
  • 12 grape tomatoes halved
  • 1 bag frozen tortellini
  • 1 clove garlic
  • 1/2 half and half
  • grated asiago or parmesan cheese
  • Italian seasoning
  • crushed red pepper
In a large skillet, brown the ground sausage, while bringing water to boil in a separate large pot. Add onion, asparagus, garlic and Italian seasoning, saute for a minute or two. At the same time add frozen tortellini to the boiling water. Add the tomatoes to the skillet and cook for a minute or two. Add grated cheese and half and half to the sausage mixture to make a light alfredo sauce. Using a slotted spoon strain the tortellini, and add to the skillet. Add a bit of Crushed red pepper, and toss all ingredients together.

Server with garlic bread.
