Ingredients:
- 2 cups flour
- 1 teaspoon salt
- 1 1/4 teaspoons baking soda
- 3/4 teaspoon baking powder
- 1 tsp cinnamon
- 1 tsp ground cloves
- 1 tsp nutmeg
- 1 tsp ginger
- 2 Tbs brown sugar
- 2 eggs seperated
- 2 cups buttermilk
- 1 tsp vanilla
- 2 Tbs strong brewed coffee
Instructions:
- Sift together dry ingredients.
- Add egg yolk, buttermilk, vanilla and coffee.
- Mix until blended, but do not overbeat.
- Beat egg whites until stiff peaks form, fold together egg whites with the batter.
- Pour 1/4 cup per pancake on lightly oiled skillet.
- Cook first side until bubbles start to form and pop. Flip and cook other side until lightly browned.
