Melt in Your Mouth Blueberry Cake

From the kitchen of Mrs. Gurney

  • 2 eggs separated
  • 1 cup sugar
  • 1/2 cup shortening
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/3 cup milk
  • 1 1/2 cups blueberries
  • cinnamon sugar mixture for topping
  • beat egg whites until stiff, fol din about 1/4 cup sugar. Set aside
  • cream shortening, add salt and vanilla. Add remaining 3/4 cups sugar and egg yolks, beat until light and creamy
  • sift flour and baking powder together, add alternately to creamed mixture with the 1/3 cup of milk
  • fold in beaten egg whites. Sprinkle 1 tbs flour over blueberries, mix lightly. Fold into cake batter.
  • pour batter into 8x8 or 9x9 baking dish, sprinkle top of batter with small amount of cinnamon sugar.
  • bake at 350 for 45 minutes
