Makes 4 salmon steaks.
Ingredients:
- 4 salmon steaks, about 7 oz each
- generous 1/3 cup vegetable oil
- generous 1/3 cup dry white wine
- 1 tbs molasses
- 1 tbs brown sugar
- 1 tbs soy sauce
- 1 garlic clove chopped
- pinch of ground allspice
- salt and pepper
Instructions:
- Put all the ingredients in a large bowl and mix until well combined.
- Rinse the salmon steaks under cold running water, then pat dry with paper towel.
- Add them to the marinade mixture and turn them until they are well coated.
- cover with plastic wrap and place in the refrigerator to marinate for at least 2 hours, or overnight.
- When the steaks are thoroughly marinated, lift out, and barbecue them over hot coals for about 10 minutes on each side, or until cooked through, turning them freaquently, and basting with reserved marinade.
- About half way through the cooking time, add lemon wedges and barbecue for 4 - 5 minutes, turning once.
