Somehow this weekend at the lake turned into a cuban culinary adventure for us. I guess it started out with Brenda trying to find a recipe for mozzarepas. Let me explain that one a little bit. While in NYC last weekend, we all shared a mozzarepa at the San gennaro festival. It's basically cornbread pancakes and mozzarella cheese, and it is so good. Well come to find out that arepas are traditionally cuban and can be filled with a variety of things. So we fiddle with a couple of recipes that we found and came up with this mozzarepa recipe. While we were at it, we decided to also find a new recipe for dinner, and we ended up with this Cuban Arroz con Pollo recipe. We were also going to make some apple empanadas for dessert, but we had enough to eat without them. Everything was delicious! Personally, I would add some spice to the chicken and rice to kick it up a bit, but it was good as is. They were both pretty easy, give them a try. {mosgoogle}
