We have been making these delectable treats for years. Not sure why it took this long for me to add this recipe here. I like to add a bit of cinnamon to the batter, and we usually sprinkle the tops with cinnamon sugar instead of powdered sugar. I hope you enjoy them, we sure do.
Ingredients:

2 eggs, lightly beaten

1-1/2 cups milk

1/4 cup packed brown sugar

2 cups all-purpose flour

1-1/2 tsp baking powder

1/4 tsp salt
-
1/4 tsp cinnamon (optional)

Oil for deep frying

Confectioners' sugar or powdered sugar to sprinkle on top
Instructions:

In a large bowl, combine the eggs, milk and brown sugar. In a separate bowl combine flour, baking powder, cinnamon and salt; beat into egg mixture until smooth.

In an electric skillet, deep fryer or sauce pan, heat oil to 375°. Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into funnel. Holding the funnel several inches above the skillet release finger and move the funnel in a spiral motion until all of the batter is released.

Fry for one minute on each side or until golden brown. Drain on paper towels. Repeat with remaining batter. Dust with confectioners' sugar or cinnamon sugar; serve warm. Makes 6 funnel cakes.
