Irish Beef Stew

Ingredients:
  • 2 Tbs bacon drippings
  • 1 1/2 pounds stew beef, cubed
  • 4 Tbs flour or Wondra
  • 2 - 3 cloves garlic, minced
  • 1 Tbs dry mustard
  • 2 - 12 oz bottles Guiness
  • 2 cups beef broth
  • 1 bay leaf
  • 1 tsp oregano
  • 1 tsp marjoram
  • 2 large onions, cut into large dice
  • 1 red pepper, cut into large dice
  • 1/4 pound fresh mushrooms, sliced (optional)
  • Flour for thickening
Instructions:
  • Heat drippings in a large saucepan, and brown meat.
  • Mix in four, garlic, dry mustard, stout, broth, bay leaf, oregano, and marjoram. Bring slowly to a boil, cover and simmer for 2 1/2 hours.
  • Add Onion, pepper and mushrooms, and continue to cook for another 1/2 hour. Season to taste, and thicken the stew with additional flour.
Notes:
  • We usually add potatoes, celery, peas, and carrots to this recipe to make a nice hearty stew.
