From the kitchen of Mrs. Gurney
Ingredients:
- 2 eggs separated
- 1 cup sugar
- 1/2 cup shortening
- 1/4 tsp salt
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/3 cup milk
- 1 1/2 cups blueberries
- cinnamon sugar mixture for topping
Instructions:
- beat egg whites until stiff, fol din about 1/4 cup sugar. Set aside
- cream shortening, add salt and vanilla. Add remaining 3/4 cups sugar and egg yolks, beat until light and creamy
- sift flour and baking powder together, add alternately to creamed mixture with the 1/3 cup of milk
- fold in beaten egg whites. Sprinkle 1 tbs flour over blueberries, mix lightly. Fold into cake batter.
- pour batter into 8x8 or 9x9 baking dish, sprinkle top of batter with small amount of cinnamon sugar.
- bake at 350 for 45 minutes
