Ingredients:
- 4 bonless chicken breasts pounded thin
- seasoned flour to dust chicken
- 3 eggs
- juice of 3 lemons
- 3 cups seasoned panko bread crumbs
- 1/2 cup parmesan cheese
- salt and pepper
- 3 tbs chopped parsley
- 1/4 cup olive oil
Instructions:
- Whisk together the eggs and lemon juice
- Combine panko, 1/4 cup parmesan cheese, salt, pepper and parsley
- Dredge the chicken in seasoned flour and place in egg mixture, refrigerate for 1 hour.
- Remove chicken from egg mixture and coat with bread crumb mixture. pan sear chicken in olive oil for 2 minutes per side.
- Place chicken in shallow baking dish and top with remaining parmesan cheese. Bake at 350 for 10 minutes
- Serve with sage lemon butter sauce
