Brenda's favorite pie as a child was always pumpkin pie. No matter what the occasion, she always wants a homemade pumpkin pie. I don't think she has ever had a pumpkin pie at a restaurant or store bought that she really liked. So here is her simple homemade pumpkin pie recipe. This is the only way she like pumpkin pie.
Ingredients:
-
3/4 cup sugar
-
1/2 tsp salt
-
1 tsp ground cinnamon
-
1/2 tsp ground ginger
-
1/4 tsp ground cloves
-
Dash of allspice
-
2 large eggs
-
1 - 15 oz can pumpkin puree
-
1 - 12 oz can evaporated milk
-
1 unbaked 9 inch pie crust (this is our favorite pie crust recipe)
Instructions:
-
Preheat oven to 425 degrees.
-
Mix sugar, salt, cinnamon, ginger, cloves and allspice in a small bowl.
-
In separate large bowl beat eggs with a fork. Add pumpkin, and sugar mixture to eggs and mix with fork until smooth.
-
Gradually pour in evaporated mill while stirring.
-
Pour into prepared pie shell, bake in preheated 425 degree oven for 15 minutes. Turn oven down to 350 and bake an additional 40 to 50 minutes until knife inserted near center comes out clean.
-
Cool on rack for 2 hours, refrigerate before serving.
