Macaroni and Cheese

  • 1 Cup of uncooked elbows
  • 1/4 Cup margarine or butter
  • 1 small onion (about a 1/4 cup)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 Cup of flour
  • 1 3/4 Cups milk
  • 8 oz. cheddar cheese( I use mild cheddar cheese)
  • Cook macaroni as directed.
  • In a sauce pan cook and stir butter, onion salt and pepper over medium heat until onions are tender.
  • Stir in flour, cook over low heat stirring constantly until smooth and bubbly.
  • Stir in milk heat until boiling, stirring constantly for 1 min.
  • Remove from heat and add cut up chunked cheese. Stir until melted.
  • Place macaroni in a greased 1 1/2 qt cassarole dish. Stir cheese sauce into macaroni.
  • Bake at 375 for 30 min.
