Ingredients:
- 1/2 pound of sliced bacon
- 1/2 cup chopped onion
- 1/2 cup chopped red pepper
- 12 eggs
- 1 cup milk
- 1 package frozen hash browns, thawed
- 1 cup shredded cheddar cheese
- 1/2 tsp salt
- 1/2 tsp cracked black pepper
- 1/4 tsp dill weed
Instructions:
- In a skillet cook bacon until crisped, remove with slotted spoon, crumble and set aside.
- Saute onion and pepper in the bacon drippings until tender. Remove from pan.
- beat eggs and milk in a large bowl. Mix all ingredients into beaten eggs. pour into greased 13"x9" baking dish
- Bake uncovered in 350 degree oven for 35 - 45 minutes, or until knife inserted comes out clean
