Carrot Cake:
- 1 cup sugar
- 1 cup brown sugar
- 2 cups flour, sifted
- 2 tsp cinnamon
- 2 tsp baking powder
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 1/2 tsp vanilla
- 4 eggs
- 1 1/4 cups vegetable oil
- 1 small can crushed pineapple (lightly drained)
Mix all of the above with a mixer. Hand mix the following ingredients:
- 4 cups shredded carrots
- 3/4 cup chopped walnuts
Pour into 2 square or 2 round greased baking pans. Bake at 350 for approximately 30 minutes. Cake will be springy and coming away from the edge of the pan. Cream Cheese Frosting:
- 8 oz. cream cheese
- 1/2 cup butter
- 1 tsp vanilla
- 3 cups powdered sugar
- dash of salt
Mix all of the above, adding sugar for desired consistency.
